Bring Six Senses Krabey Island Home with Num Ban Chok

As winter is around the corner, stay warm by making a Khmer favorite comfort dish, Num Ban Chok with Turmeric Broth – River Prawn, prepared by Six Senses Krabey Island’s culinary team. Be whisked away to Cambodia with every savory spoonful.
Preparing Num Ban Chok
Ingredients:
- 50 grams of dried chili
- 50 grams lemongrass slice
- 15 grams garlic – peeled
- 20 grams shallot – peeled
- 5 grams kaffir lime
- 50 grams of fresh turmeric
- 30 grams galangal
- 2 cinnamon quills
- 10 grams of salt
- 120 ml coconut cream
- 5 tbsp fish sauce/ taste
- 2 tbsp palm sugar
- 300 ml fish stock
- 20 grams of basil
- 10 grams of coriander
- 200 grams of River Prawn
- 160 grams of Khmer Rice Noodles
Method:
- Rough chop lemongrass, kaffir lime, peeled galangal, turmeric, garlic, and shallot. Blend in a Vitamix with coconut oil and salt until very fine.
- Place into the medium-sized pot with a cinnamon quill. Sugar and salt and cook out slowly until aromatic. Add palm sugar and coconut cream, keep boiling.
- Add fish stock and seasoning with fish sauce and salt to taste. Add peel and clean river prawn then cook the broth at the last minute before serving.
- Rice noodles quickly blanch in hot water then take them out and drain well. Keep aside and allow to hold down.
- A side of the plate to accompany Garden basil, Coriander, Cucumber, Green bean, Sesbania Flower, Banana blossom, Water lily, lime cheek, and Chili flake.
